Celemony would be my choice in general, but it depends on what kind of sound you want to export!

title is a bit vague, do you mean convert wav to midi?

most daws have good features to do that, ableton being my chosen for that type of thing.

although it always depends on what the sound is to begin with. if its a clear melody, pretty easy to do.
chords can be a bit trickier if they're a pad sound. super saw lead sounds are also difficult to convert.

ableton has a function to convert drums, melody & harmony.

    Any MIDI sequencer you like.

If it's a very simple and very clean bass line, you could try Melodyne or WIDI. But if it's more than this, it will always sound like this.

The trick is to edit the midi data, I've got some great stuff from what seemingly appears to be a chaotic arrangement of notes.

It's mainly experimental, for example I play some chord progression on my electric guitar. Melodyne converts all the harmonic information, so I use the curtain tool and also remove some notes by hand. I got some melody patterns that I would never have thought of by myself.

I would try any source material and see what comes out

With guitar there are 2 softwares I know of midgic in beta and free while in beta and jam origin which version 2 is out now. These will allow a guitar to drive a vsti, for taking it out after the fact melodyne and rolands old tech inside sonar I forget what they called it since melodyne essentially replaced it. Also getting a roland GP10 is a hardware alternative.
