Thanks for posing that question, as it's something that I should consider. Although I've been using other developers' libraries more and more (IK Multimedia, foremost – MODO Bass and Drum, Syntronik, Miroslav Philharmonik), and Arturia and Gforce virtual instruments, I still use Kontakt a lot.
To start with, if I could have only one collection, it would be the Kontakt Factory Library. I know that it's old and relatively primitive now, but there's a lot of ground that can be covered with it from the neo-classical to pop genres, with some tweaking.
I use the NI Strummed Acoustic Guitar libraries when I need that sound in the mix, because I have only an electric guitar.
The NI Giant piano has been useful to me for years, though infrequently.
The NI Symphony Essentials are really useful to me, but Embertone Intimate Strings series supplements them.
I use some SonicCouture libraries too much.
The Chris Hein oboes library is great.
I find that libraries of synth emulations made for Kontakt don't perform as well as a lot of virtual-instrument emulations of them, but the now-kinda-old Rhythmic Robot and Hollow Sun emulations of old organ/synth keyboard instruments fill the historic territory where Arturia will not go.

OMG. Yes, the Hollow Sun stuff is indispensable. Amazed I forgot that. In fact, I would entertain the idea of doing an entire record with nothing but Hollow Sun. And RR rocks too

It's usually those that we don't have.
    And it never stops, somehow...

    1. Avoid Kontakt unless you have a minimum of 16GB RAM.

I have 8gb and use Kontakt a lot and have no ram shortage, but it is highly dependent how you work. I don´t use templates but build arrangements as I go along. Also purge all samples is a great way to regain some ram. Sometimes you use 2 samples from a 1gb instrument. Purge will then bring it back to a few Mb´s

Purge does exactly what it says on the tin.

Also, the default preload buffer is way too high for SSDs, it's basically a remnant from when everybody was running 5400RPM hard drives. It's safe to override this and halve it or even quarter it. On bigger instruments this is also a significant memory saver.

I am going to go with the Factory Library 1 & 2. Just for some FXs and layering. Sometimes an idea popped out of nowhere and you just need some simple sound to enhance, extended other more important element of the song. Quick sound you can render then add FX, mangle do whatever you feel like doing and the Factory Library always comes in handy for that, well it's the first one I'd go look for first. A little timpani hit here and there, sometime bagpipes to add texture to pads, strings, choir a,e, i, o, u (my most used patches i think) for some bgv layering, love it has huge range of vocal to choose from. stuff like that.
