As Harry Haller mentioned above. Overloud TH3 for guitar. TH2 was great as well (in some ways better than TH3 [smart buttons at the bottom]). Hope they continue with the line.

Well that certainly looks cool, but I could never work with that theme, it's too distracting and I don't see the point of "emulating" real-world look of hardware elements which I cannot feel under my fingers, sometimes I like it in plugins (like Echobode) but not for the complete DAW where you spend a ton of time. Of all current version of DAWs, I think Cubase looks most professional and polished in GUI territory, although I am not Cubase user anymore.
Regarding Apple, I think they've ruined almost perfectly designed V9 look, but that's matter of taste, of course

 

Logic Pro X has the advantage of being able to be re-themed. I think there's even a Logic 9 theme floating about.

 

It's got a section in Ableton's manual (24.6/page 434 according to the table of contents). Have you read that?

Operator's pretty fun, yeah. I really like that it lets you do FM with waveforms made on an FET editor. Like Sytrus. I never think to use it, but I probably should

-Hartmann Neuron Vs, I should have a Hackintosh only for this (windows originated buggy commercial) now freeware synth.
-Cantabile v2 Vst Host , even for its developer, who made a v3 that needed more than a year to become even usable (after release).
-yamaha cx5m with yrm-101 music composer, poor mans micro synclavier, 4-operator multitimbral 8-track composing system. Z80!

Great plugins at a very, very reasonable price.

Acid Pro was underrated by almost everybody. So easy to throw up some loops for basic tracks then record over with synth or guitar.You could do a whole song in 1/2 hour.

 

Airwindows, first of all. It is pity to choose plugins by its GUI. Your music and sound is not GUI result of your DSP, but only DSP. Mostly, GUI is made by designers who do know nothing about dsp.
I would say also this - Sonimus. I also like Mellowmuse.
Several synths people don't know about, synths identical to hardware, SQ8L and so on
