So i'm looking to learn micing recording techinques like X Y or whatever they're called or using various microphones how each sounds etc.

I was thinking that there must be a VST out there that lets you mess with micing the instrument and using various microphones

it could be guitar/drums/bass/piano whatever, as long they let you change the micing position and you can see what you're doing etc

    please inform me such VST's

    Thanks!!

A VST with a virtual space and a list of virtual mics would be amazing! Alas, I don't know of one.
Unfortunately, if it existed, it still would not help you to learn as much as actually micing up an instrument or cab in the physical world, imo.
Of course, certain VSTi like 8Dio and other instrument devs do give multiple mic recordings, but you ony have control over their level and you don't know exactly where they were placed anyway. So no good for true learning.
Pianoteq has virtual mics that you can move their proximity.
And the Softube guitar cabs have a movable mic, where at least you can understand how the mic placement, and where you point it at the speaker, affects the tone.

There're several (amp-)cabinet emulations where you can change the type and position of the mics, but I agree, this doesn't help at all to understand how to mic an instrument or a vocalist.

This might be a little help for vocal miking:

One can watch a porn video and wack off or sleep with the one you love. Choose the latter if you can and not only learn more about your lover but also about yourself. Micing up a sound source is a lot like the aforementioned. It's always much more educational to actually perform the act as the practical experience trumps just a visual representation every time. Eventually invest in a microphone or a pair and get to know them and experiment on your technique. You won't be sorry.

The best way IMO is just to get a pair of condenser mics (with changable patterns like cardioid, omni and figure8) and set them up and try for yourself. A/B, X/Y, ORTF, M/S, Blumlein, Jacklin Disc, etc. You can even get some (two) small lav mics and place them close to your ear-canals and try out binaural recording. All these PRACTICAL and HANDS-ON procedures will make you learn faster than any plugin or audio example.

Amen, and they don't even have to be the most high-end expensive mics.

The placement means more than the mic.

    Haha. I know, right?
The general mind set of some young students I've met. Sad, but true.
When will they realise there is no short-cut?
Oh yeah: when it's too late, they've spent decades of money chasing the dangled carrots, and the corporations have bled them dry.
Such is the lure of the power of music. Or maybe it's 'fame'?! haha
So, I guess the psy-op is going well for the big corps.

In audio production you do not see but rather hear what you are doing.

So in general this would be feasible. Motorized microphone stands, controllable via VST.
But the noise of the motor could be disturbing during alignment.
And the cost would probably tear a hole in the wallet. But hey, we also have vacuuming robots.

A couple of solutions, though not able to to modify the axis which to me is critical to zero in on a sound. They do help though so one not wears a rut in the path from the amp to the control room

I was shown the difference in tone between going along the angle of the cone as opposed to pointing straight into the centre by my first boss 30 years ago.
I guess it captures the full range of the speaker, and not just the tone the guitarist has chosen, and gives us more to play with when eq'ing.
Definitely more verstaile than pointing straight to centre anyway.
I also see people point straight in but at a certain point of the cone, which is quite different.
But hey, I'm just a musician.
