I don't know of any that have a "hi-z option". There are many guitar plugins (guitars being an example of a hi-z instrument) that claim to model characteristics of hi-z. What are those characteristics? Sensitivity / dynamic range .... Those are 2 of the most sought after for guitarists, as it lets them alter the sound by the dynamics of their picking / strumming (and volume control / pickup selection). Anyway, a plugin can not offer actual hi-z, as it is an aspect of an input or output circuit. It might be better asked (for guitar): Is there an interface that offers a hi-z option? Answer: Most DO offer an "instrument" or "guitar" input, but how they implement that can vary too. So, what about "hi-z" do you want?
Hi z as "high impedance"? If so, that's an analog, electrical concept and has no meaning of any kind in the digital world (apart from physical analog input and output, as mentioned above). If not, please elaborate...

My reverb coded by a well known French dev has the mostest sexy lips on a plugin ever, but please excuse me for not elaborating as this is a family website so you'll just have to take my word for it.
