Name your favorite synth vst to tweak and make sounds from scratch. Workflow, fun factor and good sound.

Mine would be Vital (very intuitive, very inviting gui to sound design, and sounds very good).

Korg ARP Odyssey. Veeeery basic stuff though.

Lots of fun, specially the hardware version. Sounds awesome, the workflow is a little weird at first but makes sense once you get the hang of it. True, it won't be useful for super complex levels of sound design, but simple stuff is where the synth goodness lives (for my taste anyway).

Also, it's the first synth i got to sound like one of my favourite synth sounds ever, so i'm pretty much biased as hell.

For actual Sounddesign? Serum hands down. Because the Envelopes and LFOs are super easy to operate for building sounds to frame-based media like video or animation.

I'd say Serum or Vital (which is very similar to Serum, as far as UI). As you noted with Vital, it's pretty simple to figure out. I don't think I've spent as much time on sound design in any other VST as I have with Serum. I might start putting some time into learning Pigments sound design though.

My favourites are really Voltage Modular or Reaktor, but good ones for me are also Massive X, Zebra, and Vital for quicker workflow sometimes.

Phase Plant because of it's modular structure, and its different synthesis method
Rapid, because it's very clear and easy, also have a lot of different synthesis method, including a very good granular synthesis, and excellent effects.
Las but not least Synthmaster, a lot of synthesis methods, including additive, very good sound, good filters.

Best free: Vital and Surge. both very capable.

As you mentioned two fully modulars: do you happen to like vcv rack (just curious)?

I think exactly the same. I own Rapid (really love the granular synthesis and the awesome FX, especially the Reverb) ,Synthmaster, and Serum also.
Had tried out Phase Plant, but need to know it a bit better, but it sounds great as well.

I'll just say that VCV is a very capable patchable with plenty of modules to offer, but something always puts me off it. I think I just don't like the UI.

My comparison is really that Voltage has a lot of things going for it, like multiples on any patch point and it sounds nice as well, then Reaktor is for those things when you want to dive really deep. VCV then kind of falls inbetween those.

Id go for Vital too, and I like VPS Avenger for tweaking (I know it may sound weird to many of you but I find this synth very "warm")
Of course Serum is good but, I don't know why, I find interesting sounds so easily with Vital...
I like Roland emulations in general (Roland or Cherry Audio), the JP8 and Juno106 to be more specific. I also like the Arp 2600 a lot. (Arturia or Cherry Audio)

edit Ive seen a few guys speaking of Avenger, so I'm not that weird after all, lol

for "Tweaking" and front end gui, I will go with BX Knifonium. Everything is on the front panel. All the effects are sort of a guitar pedal style, at the top of the front panel. Sound is very good.

When it is on sale it is like 20 or 30 bucks, like all things PA. I have gotten a ton of mileage out of it for that kind of price.
