Lol, when I was learning music, I learned classic theory on piano. Then as my hunger for knowledge grew I bought the course study from Musicians Institute for jazz theory for bass.
Maybe he is on to something. A niche market that has yet to be tapped. A part of the future of learning music theory.
OK I know its really piano, but the kids won't realize its the same and would gravitate towards choosing educational topics and material with the word roll after piano. Probably just because of the familiarity and that's where they're used to working.
Like if they were choosing between a course on theory on the piano or piano roll theory, which do you think they would choose? It would essentially be the same material just different illustrations. The keys on the side instead of the bottom pretty much. This might be a million dollar idea. Piano Roll Theory™

I just need to say this real quick:

Almost every beat/bar measure translates to 4/4 though. I can change bar beat measures throughout a song and maintain the tempo. Only work would be changing bar lines and note duration. I love having intros, bridges and some hook breakdowns going (1,2,3.....1,2,3) then the drop coming in at the common (1,2,3,4)
