I'm wanting to add some spice to my tracks. I know there's probably no good Spanish guitar vst (or regular for that matter) that can sound accurate to the real thing...

But with maybe FX or a certain chain, maybe you guys can recommend one.

Indeed. Amplesound products would be my first guess as well.

 

I advice you to get already made sample phrases.
Lot less work and lot more realistic.

Guitar is one of the most difficult instrument to reproduce realistically.

Phrases/loops from real recording is the best way.

As a guitarist, i NEVER heard anything realistic from ANY maker.
Even if Ample sound do a very nice job (on most parts) :

Like others said, AmpleSound make excellent acoustic virtual guitars.
Including an Spanish one. The AGL (Alhambra Luthier Classic). There's fingered and picked samples, fingered would be more classic Spanish playing.
