In general what you want is interviews with actual professionals rather than youtubers. But there are some youtuber exceptions.

The best place to go for music production videos is usually Twitch. Actual artists with actual good discographies go there to do live streams and break down their songs. I'm not a twitch user really but this youtube account records em and uploads em to youtube, but presents them in a really good concise way (rather than having to watch hours worth of live vids on twitch): SOL STATE

It's not my genre of choice but this guy has some handy tricks: Big Z

This one is more conversational / philosophical rather than "tips & tricks" but really great: Tape Notes
