For undoing reverb (from say, surround/stage mics), i'll suggest dereverbers like izotope's dereverb , or QuikQuak Mashtactic (actually a MB transient designer). For doing reverb (to stage/surround mics say), you have reverb units.

 

can you also inform us about what vst to use to emulate stage mics ? thank you....
