Don't get too excited, you can open both of those up in 12.1, I'm not seeing anything different to the functionality in 12.2b17 here.
Have you tried actually using it on audio? Dragging it to an audio clip on a track is pulling up an empty window, same for Spectralayers.
Mine is set to step, but you can set to ramp and it will turn your freehand to simplified ramps, or you can use the bezier curves.
