It all depends. Layering can be very effective. There are only CPU- and imagination limits. There are no rules. I know a japanese sound designer...
Any frikken synth will make a pad sound. Add reverb. Layer with piano. Done.
Maybe it's all about layering. Sometimes you think you hear one (1) sound, when it is fact five (5) sounds or more layered ontop of each other....
You can use any reverb (out there. There are a few) on your master. Duh. ;)
That footage is actually staged/directed. The "homeless guy" is not homeless at all. It's a promo video for the band, with a good message however....
I'm not going to suggest a bunch of plugins, but instead say "get to work" - read, learn, listen, absorb, get to know your tools. Make mistakes...
