closest you might get is BomeBox - A MIDI Hub and Router for connecting musical instruments via MIDI DIN, USB, Ethernet, and WiFi.
but I have no idea if it's class-compliant enough for iPad use

UPDATE:
So, i tested RustDesk: It´s better!!!
It´s a bit faster and more responsive then Sunshine/moonlight
AAAND: Pinch zoom gestures are working with the Magic Keyboard Trackpad.
ALL other softwares could´nt do that.
The scrolling and zooming feels better.

Still testing the next days. But i really like my Ipad. Will see what happens the next days

there alot video's out there and stuff to read about this software. Looks like its all software you need to buy on IOS and need to buy again on Windows and it still only working on a local network. its looks like Not working on 5G mobile network. it just for Wifi or just a internetcable.

i hoped that someone had an idea for sending this midi signal to you pc at home, when your Ipad is on the mobile 5G internet. But looks like this not possible when your ipad isn't on the same network as your main daw pc.

But must say i Never thought of using an apple pencil but this works pretty fast and nice with Ableton 12 and Mircosoft RDP on an ipad ...
I don't need a midi keyboard anymore when working remotely outside the network. This drawing with a apple pencil is nice ;)

 

this is what i use. with reaper. i bought the paid version years ago. it's now called touchDAW on android. edit meant to include post that linked rtpmidi and touchocs. edit 2 i forgot ive been using the web browser controller more than the apps.
