I am wanting to know, if there is a way apart from screen recording and audio routing, is there a way to download the videos from education music courses like for example 'streaky's music production course'. I know that has been made available on the sister site, but im curious as to how it was done.

Was it just straight screen capture and audio routing, or was it done another way

Sometimes it's enough to open developer tools in your browser (usually F12), go to the Sources tab, refresh and filter for mp4/webm/whatever and right click -> download. For more complicated stuff, like videos that are streamed in chunks and require authentication, you'd copy the cookies from your browser, feed them into something like ffmpeg, youtube-dlp, jdownloader and dump the output file to disk.

Real streaming services are more complicated and may require dedicated decrypting tools.
