I have old no name headphones. And they are not that bad.
But their potentiometer is damaged and audio jumping from left to right and crackling.

What if i just cut out the potentiometer and join cable again?
    Will it solve the problem?
What Volume Level will be after?
    Is it possible?

i guess if you get rid of the potentiometer then the volume will just be whatever comes down the cable factoring the headphones impedence and all. just my two cents

If you can open the volume "box", you can solder wires inside from input to output.
And cables will be already "ready" to solder.

But of course, if the box is sealed, cutting the box and soldering cable directly will do the job for sure
