My Quick Load is full and I can't drag & drop a folder any longer.
Is there a different way to add a folder to Quick Load?

Are you sure it is full?
Sure it is not just still scanning? (Check for the spinning icon.)

They are folders on your computer.
I believe for Windows installed version it is:
    "C:\Users\username\AppData\Local\Native Instruments\Kontakt\QuickLoad" (or similar)

    In Portable it is "UserData\Kontakt\QuickLoad"

I have only one quickload folder and just Symlink it into whatever versions and types of Kontakt I am running, because it is really all about the libraries.

Some people might keep their real Quickload folder with their Kontakt library, but if one has several locations and moves libraries, it makes one more thing to re-link. So I think it is best to keep it in my personal "[ Studio ]\Presets\Vsti\Ni\Kontakt\" folder and symlink it from there.

I also find it most sensible to do all modifications (renaming, etc) from within Kontakt, so I can see how it looks as i go.

I guess you misunderstood my issue. What I mean is that I've been draggin the instruments into the Quick Load on Kontakt. Now, The Quick Load container(?) is full, so I can no longer drag anything in it. Let me show you the screenshot. A picture is worth a thousand words.

Yeah, you have to stay within the height of the window or you can't drag into the left column itself.
I'd suggest making categories. I like to use numbers for main categories because it is easy to reorder them.
You can also make subcategories, of course, but I like to limit how far it must scroll horizontally.
I like to abbreviate and worked out a basic formula to keep the vendors initials in there and still fit names.

Ok, it can be a solution. That's a great idea! Need to think about it.
    Thank you!
