but to stay the closest to the main question you had. The International Agency for Research on Cancer, has determined that rock-wool does not have the Ability or tendency to produce cancer.

do you by any chance smoke? My guess is that all the rock-wool cautions can be thrown out of the window.

I hope you won't mind a more general post, I feel that you want to start seriously treating you room and maybe I could offer some help as I've been through this.

As long as you cover the rockwool well enough, you should be fine. It irritates the skin a lot but there's no evidence about it being cancerous. It was developed as a non cancerous alternative to asbestos, if I'm not mistaken.
Make sure to check the Knauf ecose series, and especially Ultracoustic mineral wool. It's better than generic rockwool.

An easy and great way to cover it is IKEA Skubb. Just put the rockwool inside it and it's done, it has firm sides so you can put it on the wall as is and it will look good. You don't need it to be "breathable", are you sure you need absorbsion of HF where you will put it? If you don't have a cloud above the sweetspot, put a carpet, and also put foam at the first reflection points. This should be enough for HF. Make sure to not end up with a too boomy and uneven room by putting too much foam and breathable materials in it.

You can put / glue foam in front of the IKEA Skubbs if you have those at first reflection points. I would recommend to get as much rockwool and Skubbs as you can fit, you cannot have too much bass absorption! Having a slight gap from the wall, around 5-10cm, will improve the absorption at the lowest frequencies.

PS. I recommend Sonarworks, or at least, a mic for room measurements so you can actually see your room's freq. response, reverbation etc. It can make a big difference! At minimum, it will help you to find the room's best sweetspot. A software called Room EQ Wizard can help with this too, as it accurately simulates your room's response, and includes simulation for sub systems.

Where i live we isolate houses with rockwool i've NEVER seen a construction worker using mask when they work with rockwool
Sometimes gloves at it will be itchy if you make contact but some hard guys dont use gloves either.

But since you not used to work with rockwool its best if you where a mask and gloves
