Yeah, you might be right. I might have just read it wrong.

...and also... if you're a fast player, you will probably notice some timing differences in what is recorded through different MIDI interfaces. USB MIDI has a really "nice" jitter, whilst plain MIDI interfaces [DIN] deliver less jittery performance.

So you can be a great player, but if you record your performance through a MIDI interface with great jitter, what you record will not be what you played. This is of not much concern for the "quantise everything" crowd... but there's also MIDI out jitter. To make the timing better you should actually aim for the least MIDI notes/events at once, since it's a serial protocol, which means it can send only one event at a time. Now imagine how your smooth cutoff CC can affect the MIDI timing of your notes... for example.

That's one of the reasons why I use one computer just as a very modern multi-tracking recorder - to render all the tracks into WAV one by one, and then I mix them oldschool way. [avoiding too many events being sent through MIDI at once by recording one track at a time].

The OP was not as clear as we were ,on what he was trying to explain. I only replied to you to avoid any confusion. As we know, "sound quality" is something totally different from the "performance quality" but some people get them mixed up. Many people hear a bass player jamming. love how she plays it and say "It sounds great" the would say, 'she can really play", and both meant the same. A bad performce can still have a good sound quality and a great performance a bad one.

Reason why I prefer CV/Gate over MIDI any time.

I'd like to add that having been playing acoustic, electro-acoustic, and MIDI keys since the start of MIDI, that when any experienced instrumentalist sits down to any acoustic piano/rhodes/vst/elastic band, they will instantly attune to its limitations and its positives. And they'll (hopefully!) make it sound good.
So I'd say that your own sensitivity is more important.
I'd say that as long as you at least have a velocity sensitive keyboard, and hopefully at the least a few veocity curves, you can attune yourself to a sound on your synth, and get a vibe going. You can always edit note velocity after.
