I don't know if I'm just missing it or what but in Studio One 2 you could overdub when recording instead of replacing the audio that's there. How do you set that up in Studio One 3? I've tried the recording panel but it isn't on there.

Yes I have and for sine reason it still replaces the audio instead of overdubbing it. :/

 

Disable loop while recoreding, active "play overlaps" in the Inspector, after you have finished to record glue events and bounce to have a unique file. Some things now with V3 are worser, just look a the option "play overlaps" that should be actived everytime manually in every single audio track. I've already told that for me V2 is better but people are more happy for the GUI...

 

If your question relates to audio (no instruments), you could try to record the track in 'Loop Mode' (Takes to Layers -> Unpack Takes to tracks [Right-click on top EVENT]), etc.

I suppose there is no direct way. Studio One has a range of really interesting features, but a number of functions are well hidden and some appears unfinished...
