So you want to replace music in a film? Or you want to write music for a film and you re not sure how to mix music in without interfering with the dialogue?

Audacity (free) is very powerfull, Audition as well. I don`t think it`s possible to mute it, but to make it "inaudible".
Can be a pretty big task though, depending on the source file and the editors experience.

For starters filter Center channel in 5.1 configuration - watch out for FX, low-cut may help, while in most cases Center contains only dialogue.

    Here and there.

There is no software existing that can totally isolate just the voices from an entire movie! *no*
With a lot of tools +WORK you could lower the other unwanted sounds…
…or you'd need the master recording (or stem) to mix down as you like.

Basically you want to, kind of, practice writing music for films, right? If you got hired to do music for a film, it wouldnt have any music in it anyways...
I suggest you find films without any music. Its a lot simpler than what you want to do. There is plenty of films like that. Of the top of my head, you can start with Dogma 95 movies, no music in them by manifesto...

DVD Audio Ripper - this'll help you to extract 6 channels from VOB files to WAV (or FLAC) *yes*
    Then use the Center one.
