Generally, you can't, I don't believe. Libraries have unique UPID and SNPID, and so updated versions will use same identifiers in the .nicnt file as I understand it. There may be some workaround using @bobdule tools to create a different .nicnt, but I think mileage will vary in terms of getting it to work and how reliably it will work etc. I had best luck by installing Kontakt 6 and 7, and then adding things into Kontakt 6 using custom .nicnt, and then they will also show up in 7. However, this varies though and requires you to take over the identifiers of another library in some cases, e.g. I use the Spitfire Albion 1 identifiers in the .nicnt to make my Albion 1-5 collection visible in Kontakt and Kontakt essentially thinks it's Albion 1, but all works fine (for far!).

If the samples are the same, just rename the old patch to something else (try if in doubt). If the samples are different, keep two differently named folders.

But your post doesn't include a lot of details, so I'm only guessing what you're trying to do here.

I have some projects which use old instruments from LASS, Symphobia and OE 2, and the new versions of these libraries are around ... Project SAM has entirely redesigned its UI and now there's only one file to browse to the instrument we need whereas earlier it had separate nkis for every instrument.I am kind of afraid if the old projects will still keep working or not if I upgrade to a newer version.I thought may be I can use both by keeping the two versions separately but am skeptical if they'd load or not

Unless this is somehow different from DAW to DAW, Kontakt will just restore the patch from your project. It doesn't care if the original nki/nkm files are still on your drive. So long as the original samples are still there (and presumably some dynamically loaded resources like IRs). Try if in doubt. Start a new project, add Kontakt, load some ghetto patch, save the project, move the original nki file to some other folder, open the project again.
