I am currently on Windows 10 LTSC 2019. I have a bad habit of formatting & reinstalling operating systems & enough experience of working on both LTSC and Pro.
I experience performance boost when I am on W10 LTSC. It is light on resources. Everything feels snappier than W10 Pro. Once installing and updating, you won't be seeing frequent windows update notices. There is no windows store and it's apps and services. It feels faster.
If you need a serious machine for work which is more stable, gets fewer updates, I will recommend Windows 10 LTSC.
I also like using Win10 Pro. But it comes with bloatware and it's not as fast as LTSC. Difference is not huge, but can be experienced on slower machines.
In a fast processor like intel'e i7 from a recent generation or amd's ryzen 7, you wont notice difference in performance.

If you're using a {Gen2} release, you don't have to worry about the license expiring.

I want to give my 2cents.
I had a look to the above mentioned TeamOS Win10s, but if I understood they're not stripped down Wins, but customized.

On the other hand, I tested lite and ultralite Wins (7 and 10), and I can affirm that not always the're the right choice, cause at times they couldn't even allow installations of software, giving errors, crashes, and so on.

Speaking for myself I can say that I found a pretty stable and really stripped down Win10 with the Oprekin (google oprekin dot com)
version, that is Win10Pro 2004.172 LitePlus, now there are newer version that I didn't test.

    Thanks for the advice

I am reading that it is quite easy to dl a formal Win 10 iso and then disable or remove things like Cortana...
Would I be right to think this becomes a bit more like LSTC?

It's all the same Windows 10 with the exact feature set. The difference is how often those versions get updates.

You will stay at a certain point of Windows 10 with LTSC. You still get important updates for security, but those updates that change the OS furthermore, will stay out (for example the totally useful weather display which came with the last update).

    Windows 10 Enterprise LTSC 2019 = Windows 10, Version 1809

For those who work with Windows LTSC versions are neat. You don't have to worry about updates that mess everything up. If you don't know if you need LTSC, you don't need LTSC. Just stick to standard Windows 10 branch.

    :)

I am looking at making a custom iso.
    I'm guessing that:
    - removes things you cant add back
    - may make system unstable for some apps

Vs vanilla iso but tweaking after install
    - disables rather than removes, so takes more hdd space but is safer

I'd continue to use Win 10 LTS (B or C). LTS stands for long term service so you've important updates guaranteed for a long time.

What you can't do is to have a version newer than v1809. The LTS versions upgrade at a much slower pace than the Pro/Home/Enterprise versions.

i am using KMSpico for a long while. When the 90 days are over, simply run KMSpico again and windows is activated.
Enterprise license are not 180 days anymore?!

(Edit: I don't know about Enterprise license, it may work too)
I actually found a Win10 KMS based OFFLINE activator, I was surprised enough because I didn't know it existed, but it really worked.
I installed Win10 on a virtual machine in april, it's still activated, online or offline.
    Picture of today.

I remember being one of those folks always suggesting LTSB, LTSC or modded LITE builds,

I changed my mind a lot (especially because going Mac/Hackintosh route is so refreshing I don't really think about going back to Windows anytime soon) so here's what I'd say about the topic now:

Microsoft's attitude to Windows 10 is overall rather disappointing, so if you want Windows 10, just deal with how regular up-to-date version behaves and performs,
problem with various LITE and streamlined builds is, you can always end up removing/missing something resulting in unexpected failures and reliability issues, imo it's not worth it now when computers are moderately fast to compensate the Windows design faults,
most "problems" with Windows are based on online activity (updates, telemetry, various shit background processes etc..) and the nature of Windows getting bloated and slowed down just by the amount of software installed together
    - that said, solution is surprisingly simple:
    1) figure out network blocking (no internet connection is easy way, NetLimiter 4 is convenient compromise, Pi-hole dedicated device on your network being hardcore solid solution)
    2) install only things you need, and if you want mess with things up, then either make full disk backups or have two drives with two Windows systems so you can use one "for fun" and another for actual use

if you don't believe - just try yourself, make clean Windows install, don't ever connect it to internet, things will just work fine
