The only thing I would consider changing is Get 3200mhz RAM. Ryzen benefits from faster RAM. And it is not that much more.

The 3800x has only slightly better single core performance than the 9700K but it has twice the number of threads, so in multicore performance the Ryzen annihilates Intel. For only $50 more I think that's a no brainer.
1. ditch the Nvidia chipset graphics card and go AMD, Nvidia tends to mess with audio sometimes, especially with Cubase. 2. Your data drive is too slow, 7200rpm will serve you much better for streaming samples also look for a NAS drive, they excel at streaming media 3. while thunderbolt 3 compatibility is nice it's not a deal-breaker unless you plan to buy a compatible audio interface and drive in the near future, not many products out there support it and they are pretty pricy.
Go for the Ryzen .. it would be stupid to buy one year old Intel CPU .. I also came from a 9700 to a Ryzen 3700X .. Single Core Perfomance is much better .. my projects in ableton have up to 15% less CPU load ..

That 5400rpm Seagate needs to go. If it's for samples and games you want a 7200rpm drive. If you are using heavy samples like Orchestral stuff you'll need an SSD
